A savory, high-protein vegan roast made from vital wheat gluten, seasoned with herbs and spices, perfect as a holiday centerpiece or hearty main course.

Why it's healthy

This Seitan Roast is an excellent source of plant-based protein, primarily from vital wheat gluten, which is crucial for muscle maintenance and repair. It is naturally cholesterol-free and very low in saturated fat, making it a heart-healthy alternative to traditional meat roasts. The inclusion of nutritional yeast often adds B vitamins, including B12 if fortified, which are essential for energy metabolism and nerve function. Furthermore, seitan provides a notable amount of minerals like iron and phosphorus. Its high protein and low-fat profile makes it a very satiating food, beneficial for weight management and sustained energy without the heavy feeling of high-fat meals.

Ingredients

  • 1/3 cup vital wheat gluten
  • 1 tbsp nutritional yeast
  • 1/2 tsp onion powder
  • 1/4 tsp garlic powder
  • 1/4 tsp dried thyme
  • 1/8 tsp dried sage
  • 1/8 tsp black pepper
  • 1/4 cup vegetable broth
  • 1 tbsp soy sauce or tamari
  • 1 tsp olive oil

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a medium bowl, whisk together the vital wheat gluten, nutritional yeast, onion powder, garlic powder, thyme, sage, and black pepper.
  3. In a separate small bowl, mix the vegetable broth, soy sauce, and olive oil.
  4. Pour the wet ingredients into the dry ingredients and mix with a spatula until a shaggy dough forms.
  5. Knead the dough gently on a clean surface for 1-2 minutes until it feels firm and elastic. Do not over-knead.
  6. Shape the dough into a small, compact loaf or log.
  7. Wrap the loaf tightly in a large piece of aluminum foil, creating a sealed packet.
  8. Place the wrapped seitan in a small baking dish and bake for 60-75 minutes, flipping it over halfway through.
  9. Let the roast rest in the foil for 10 minutes before unwrapping and slicing to serve.
