Serves 1 · Prep 10 min · Cook 33 min · 475 calories per serving

A hearty, high-protein vegan burger made from seasoned vital wheat gluten, offering a satisfyingly chewy and meaty texture that's perfect for grilling or pan-searing.

Why it's healthy

This seitan burger is an excellent source of plant-based protein, providing over 50 grams per serving primarily from vital wheat gluten, which supports muscle maintenance and satiety. It is entirely free of cholesterol and low in saturated fat, making it a heart-healthy alternative to red meat burgers. The inclusion of nutritional yeast often adds B-vitamins, including B12 if fortified, which is crucial for nerve function and energy metabolism. Seitan is also a good source of minerals like phosphorus, essential for bone health, and iron, necessary for oxygen transport in the blood. This burger offers a nutrient-dense profile with significantly less environmental impact.

Ingredients

  • 1/2 cup vital wheat gluten
  • 1 tbsp nutritional yeast
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp smoked paprika
  • 1 tbsp soy sauce
  • 1/2 cup low-sodium vegetable broth
  • 1 tsp olive oil
  • 1 burger bun
  • Toppings: lettuce, tomato, onion slices

Instructions

  1. In a medium bowl, whisk together the vital wheat gluten, nutritional yeast, garlic powder, onion powder, and smoked paprika.
  2. In a separate small bowl, combine the soy sauce and vegetable broth.
  3. Pour the wet ingredients into the dry ingredients and mix with a spatula until a shaggy dough forms.
  4. Gently knead the dough in the bowl for about 1 minute until it becomes firm. Do not over-knead.
  5. Shape the dough into a single patty, about 1/2-inch thick.
  6. Wrap the patty tightly in a piece of aluminum foil.
  7. Place the wrapped patty in a steamer basket over simmering water, cover, and steam for 25 minutes.
  8. Carefully unwrap the patty and let it cool for a few minutes. It will be very firm.
  9. Heat the olive oil in a skillet over medium-high heat. Pan-sear the patty for 3-4 minutes per side, until a golden-brown crust forms.
  10. Serve immediately on a toasted bun with your favorite toppings.
