A fragrant and hearty vegan biryani featuring tender, spiced seitan layered with long-grain basmati rice, slow-cooked to perfection using the traditional 'dum' method.
Why it's healthy
This Seitan Biryani is a protein powerhouse, with seitan providing over 25g of plant-based protein per serving, essential for muscle maintenance and satiety. Unlike traditional meat-based biryanis, it is free from cholesterol and low in saturated fat. The use of whole spices like turmeric, ginger, and garlic offers anti-inflammatory and antioxidant benefits. Basmati rice provides complex carbohydrates for sustained energy release, while fresh herbs and vegetables contribute essential vitamins, minerals, and dietary fiber, supporting digestive health. This dish offers a balanced macronutrient profile in a flavorful, satisfying meal.
1. Rinse and soak the basmati rice in water for 30 minutes. Drain.
2. In a bowl, combine seitan, vegan yogurt, ginger-garlic paste, turmeric, chili powder, biryani masala, and salt. Mix well and let it marinate for at least 30 minutes.
3. In a pot, bring 3 cups of water to a boil with the whole spices (bay leaf, cardamoms, cloves) and 1/2 tsp salt. Add the drained rice and cook until it is 70% done (about 5-7 minutes). Drain the rice and set aside.
4. In a heavy-bottomed pot or dutch oven, heat the oil over medium heat. Add the sliced onions and fry until golden brown. Remove half for garnish.
5. To the remaining onions in the pot, add the marinated seitan and cook for 5-7 minutes until it starts to brown.
6. Add the chopped tomato and cook until it softens and oil begins to separate from the masala.
7. Begin layering. Spread half of the par-cooked rice over the seitan masala. Sprinkle with half of the fried onions, mint, and cilantro.
8. Top with the remaining rice. Drizzle the saffron-infused milk over the top. Sprinkle the remaining fried onions, mint, and cilantro.
9. Seal the pot tightly with a lid. You can use aluminum foil or a traditional dough seal. Cook on the lowest possible heat for 15-20 minutes (this is the 'dum' process).
10. Turn off the heat and let it rest for 10 minutes before opening. Fluff the rice gently with a fork and serve hot.
