A fragrant, homemade spice blend used to create the authentic flavor of the popular Indian street food, Pav Bhaji.
Why it's healthy
Pav Bhaji Masala is more than just a flavouring agent; it's a potent blend of health-promoting spices. The base ingredients, coriander and cumin, are known to aid digestion and possess anti-inflammatory properties. Turmeric, a key component, contains curcumin, a powerful antioxidant that helps combat oxidative stress. Spices like cloves, cinnamon, and black peppercorns are rich in antioxidants and have antimicrobial benefits. Cinnamon, in particular, may help regulate blood sugar levels. Fennel seeds are traditionally used to relieve indigestion. By making the masala at home, you control ingredient quality and can omit salt, reducing sodium intake.
Ingredients
2 tbsp coriander seeds
1 tbsp cumin seeds
1 tsp fennel seeds
1 tsp black peppercorns
5 cloves
1-inch cinnamon stick
1 black cardamom
4 dried red chilies
1 tsp amchur (dried mango powder)
1/2 tsp turmeric powder
1/2 tsp black salt (kala namak)
Instructions
In a dry pan over low heat, add the whole spices: coriander seeds, cumin seeds, fennel seeds, black peppercorns, cloves, cinnamon stick, black cardamom, and dried red chilies.
Roast for 3-4 minutes, stirring continuously, until they become aromatic. Be careful not to burn them.
Remove the spices from the pan and allow them to cool down completely.
Once cooled, transfer the roasted spices to a spice grinder or a high-powered blender.
Add the powdered spices: amchur, turmeric powder, and black salt.
Grind everything together into a fine, uniform powder.
Store the homemade Pav Bhaji Masala in an airtight container in a cool, dark place.
