A traditional Indian diamond-shaped sweet made from cashew nuts and sugar.
Why it's healthy
Kaju Katli's primary ingredient, cashews, provides heart-healthy monounsaturated fats, which can help manage cholesterol levels. They are also a good source of essential minerals like magnesium, crucial for bone health and nerve function, and copper, which aids in iron absorption and energy production. The sweet also offers a modest amount of plant-based protein. While high in sugar and calories, making it a treat to be enjoyed in moderation, the inherent nutritional benefits from the cashews contribute positively to a balanced diet when consumed as part of a special occasion.
Ingredients
1/4 cup cashew nuts
2 tbsp sugar
1 tbsp water
1/2 tsp ghee
A pinch of cardamom powder (optional)
Instructions
Grind the cashew nuts into a fine, smooth powder. Be careful not to over-grind, or it will release oil and become a paste.
In a non-stick pan, combine sugar and water. Heat on low-medium flame until the sugar dissolves completely to form a one-string consistency syrup.
Add the cashew powder to the sugar syrup and stir continuously to avoid lumps.
Cook the mixture on a low flame, stirring constantly, until it thickens and starts to leave the sides of the pan. This should take about 5-7 minutes.
Add ghee and cardamom powder. Mix well and turn off the heat.
Transfer the cashew dough onto a greased parchment paper or plate.
Let it cool slightly until it's warm enough to handle. Knead the dough for a minute until it's smooth.
Place another sheet of parchment paper on top and roll the dough to about 1/8 to 1/4 inch thickness.
Let it cool and set completely for about 15-20 minutes.
Cut into diamond shapes using a knife or pizza cutter.
