Kachumber Salad

Serves 2 · Prep 10 min · 45 calories per serving

A refreshing and simple Indian chopped salad made with cucumber, tomato, and onion, dressed with lemon juice and spices.

Why it's healthy

Kachumber salad is exceptionally healthy as it's composed entirely of raw, fresh vegetables, making it low in calories and fat. The high water content in cucumber aids hydration, while tomatoes provide a rich source of Vitamin C and the antioxidant lycopene, which supports cellular health. Onions contain beneficial flavonoids like quercetin, known for its anti-inflammatory properties. The lemon juice dressing adds more Vitamin C, boosting immunity. Being uncooked, the salad retains all its natural enzymes and heat-sensitive vitamins, and its fiber content supports healthy digestion and promotes a feeling of fullness.
