A simple, refreshing Japanese appetizer of chilled silken tofu adorned with savory toppings, perfect for warm weather.
Why it's healthy
Hiyayakko is a light yet nutritious dish centered on tofu, a complete plant-based protein containing all nine essential amino acids. Tofu is low in saturated fat and calories while providing significant amounts of iron, calcium (if calcium-set), and manganese. It's also a key source of isoflavones, plant compounds studied for their potential health benefits. The fresh toppings like ginger and scallions add antioxidants and flavor without excess calories or fat. This dish is minimally processed, preserving the natural nutritional value of its ingredients, making it a heart-healthy and well-balanced choice for a light meal or appetizer.

1 tbsp soy sauce (or tamari)
1 tsp freshly grated ginger

Drizzle the soy sauce over everything just before serving.
