Dhokla

Serves 1 · Prep 10 min · Cook 20 min · 110 calories per serving

A savory, steamed, and spongy cake made from gram flour, originating from Gujarat, India.

Why it's healthy

Dhokla is a nutritious snack primarily due to its main ingredient, besan (chickpea flour), which is a good source of plant-based protein and dietary fiber. Protein is essential for muscle repair, while fiber aids digestion and promotes satiety, helping with weight management. The traditional fermentation process enhances the bioavailability of nutrients like B-vitamins and breaks down complex carbohydrates, making it easier to digest. As it is steamed and not fried, its fat content is very low, making it a heart-healthy option. It has a low glycemic index, which helps in regulating blood sugar levels. The tempering adds beneficial spices like mustard seeds and curry leaves, which contain antioxidants.

Ingredients

  • 1/4 cup gram flour (besan)
  • 1 tbsp semolina (sooji)
  • 2 tbsp plain yogurt
  • 3 tbsp water
  • 1/2 tsp ginger-green chili paste
  • 1/4 tsp turmeric powder
  • 1/2 tsp sugar
  • 1/4 tsp salt
  • 1/2 tsp lemon juice
  • 1/4 tsp fruit salt (Eno)
  • 1 tsp oil
  • 1/4 tsp mustard seeds
  • 3 curry leaves
  • 1/2 green chili, slit
  • Chopped coriander for garnish

Instructions

  1. In a bowl, mix gram flour, semolina, yogurt, ginger-chili paste, turmeric, sugar, and salt. Add water to make a smooth batter and let it rest for 10 minutes.
  2. Grease a small steaming tin. Bring water to a boil in a steamer.
  3. Add lemon juice and fruit salt to the batter, mix until frothy, and immediately pour into the greased tin.
  4. Steam for 15-20 minutes on medium heat until a toothpick comes out clean.
  5. Let it cool slightly, then cut into pieces.
  6. For tempering, heat oil in a small pan. Add mustard seeds, let them splutter, then add curry leaves and green chili.
  7. Pour the tempering over the dhokla.
