Cilantro Chutney

Serves 4 · Prep 3 min · 5 calories per serving

A vibrant and refreshing Indian condiment made with fresh cilantro, green chilies, and a hint of lemon.

Why it's healthy

This chutney is exceptionally low in calories and fat, making it a healthy way to add immense flavor. The primary ingredient, cilantro, is a rich source of Vitamin K, essential for blood clotting and bone health, and provides significant amounts of Vitamin A and C, antioxidants that support immune function and skin health. Ginger contributes gingerol, a compound with potent anti-inflammatory and antioxidant properties. Lemon juice adds another boost of Vitamin C. Since it's uncooked, the vitamins and delicate plant compounds in the fresh herbs are fully preserved, offering maximum nutritional benefit.

Ingredients

  • 1/4 cup fresh cilantro, packed
  • 1/2 green chili
  • 1/8 inch ginger
  • 1 teaspoon lemon juice

  • 1/2 tablespoon water

Instructions

  1. Combine all ingredients in a small blender or food processor.
  2. Blend until a smooth paste is formed, scraping down the sides as needed.
